50g Cheddar (Finely Grated)
15g Butter
15g Flour
1/2 Pint of Milk
1 tsp Mustard
1/2 tsp Salt
Pinch of Pepper
1 - Melt butter in pan. Add flour and cook over low heat, stirring, for 2 minutes. Do not allow mixture to brown.
2 - Gradually blend in milk.
3 - Cook, stirring, until sauce comes to boil and thickens.
4 - Simmer very gently for 3 minutes.
5 - Stir in the finely grated cheese and mustard.
6 - Season to taste with Salt and Pepper.
