White Vegetarian Stock - 1 Litre

100g Onions
100g Carrots
100g Celery
100g Leek
3 Pnts Water

1 - Place all ingredients into a saucepan, add water and bring to the boil.

2 - Allow to simmer for approx 1 hour, skim if necessary.

3 - Strain and use.
